Herb, Ham & Cheese Frittata
  • 6 Eggs
  • 1/2 cup evaporated milk
  • 1/4 cup Paducah Olive Oil’s Tuscan Herb infused olive oilcan sub: rosemary, wild dill or basil
  • 1/2tsp Sea Salt
  • 1/4tsp Black Pepper
  • 1/4 cup chopped green onions
  • 1/2cup chopped red or green bell peppers, or a mix of colors
  • 1/2cup diced ham
  • 1 1/2cups grated cheddar cheese
  1. Preheat the oven to 350 degrees. Grease a 9 inch pie plate. In a mixing bowl, beat the eggs, cream and the olive oil. Pour this mixture into the prepared pie plate. Sprinkle the remaining ingredients over the egg mixture in the order listed, finishing with the cheese. Sprinkle half the cheese on top and poke it down a little so that its covered with egg mixture. Then sprinkle the rest evenly over top. Bake for 30-35 minutes, or until a knife inserted in the center comes out clean, to ensure the center is set. If the cheese is browning too quickly, cover it loosely with aluminum foil. Allow to cool slightly and firm up a bit before serving warm.
